Taco Bake

Easy, cheesy Taco Bake is the perfect change up to our Taco Tuesday!  What I love even more is the ability to switch it up.  For this particular recipe I used plain Fritos Scoops, but you could easily use the chili cheese Fritos, Doritos, or even tortilla chips.  Next time I think I will mix in a can of rotel to spice it up!

Don't like ground beef?  Substitute with ground turkey.  

  • 1 lb Ground Beef
  • 1 pkg Taco Seasoning
  • 2/3 Cup Water OR what your taco seasoning pkg suggests
  • Corn Chips (plain, chili cheese, Doritos, or tortilla chips are also an option)
  • 1 Can Cheddar Cheese Soup
  • 1/2 Cup Milk
  • 2 cups of Shredded Mozzarella
  • Toppings as desired: Pico de gallo, guacamole and sour cream
  1. Cook ground beef in medium skillet until cooked through, drain.
  2. Add taco seasoning and water, mix together, stir, and simmer for 5 minutes
  3. Pour enough chips to cover the bottom of a 9 X 9 baking dish. 
  4. Top with taco meat.
  5. In a separate sauce pan combine the soup and milk.  Heat until thoroughly mixed. 
  6. Top the taco meat with cheese mixture.
  7. Top with cheese (the more the merrier for my little family)
  8. Crush chips and put them on top.
  9. Bake at 350 for 20-25 minutes OR until golden and bubbly. 
  10. Garnish with your favorite toppings and serve.




  1. We tried it (and liked it!) last week...so easy but yummy! I used fiesta blend cheese instead and added jalapeños to half of it. Definitely making this again soon. :)

    1. Oooooh, I love that idea! We LOVE some jalapenos at our house. I just usually plop them on top with the sour cream. Did you mix it in with the cheddar cheese soup mixture? My Mom mixes in a can of rotel and a can of green chilies with hers which I thought was good idea too.
