Chili Mac

Oh.goodness, y'all. 


This was a family favorite.

I was craving chili the other night, but also craving pasta.  Something hearty and soulful.  This house has been sick all week and I needed something quick, painless, and that included items I would have in the pantry.  

In walks chili mac.  

It was so good it's on the menu again for this week and I could easily see this as a crock pot recipe too!  I might just have to try it that way this week and report back.  ;-)

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 lb of ground beef
  • 1 can of beef broth
  • 1 can of rotel
  • 2 teaspoons chili powder
  • 2 teaspoons of cumin
  • 2 teaspoons of garlic powder
  • salt and freshly ground black pepper to taste
  • 16 ounces uncooked elbows pasta
  • 1 8 ounce package of cream cheese
  • ½ cup of milk
  • ½-1 cup of water
  • shredded cheddar cheese

  • Heat oil in a large skillet or Dutch oven over medium high heat. Add onion, ground beef, and cook until browned.  Drain. 
  • Add beef broth, water, rotel, and seasonings.  Stir.  Season with salt and pepper.   
  • Bring to a boil and add elbow pasta.  Cover, reduce heat, and simmer until pasta is cooked through.   
  • Add milk and cream cheese.  Stir until thoroughly until mixed.   Remove from heat.   
  • Top with cheddar cheese and serve.
