Taco Soup

I've had a few folks ask for this recipe so here it is, y'all.  I'm not a recipe person.  I prefer to think of recipes as a guide.  So if you're looking for exact measurements, you may or may not find them with me.  Chances are, I'll let this taco soup simmer just like it is all day.....and then an hour before serving it, decide I need to add this or that.

2 lbs of ground beef or turkey
1 white onion
A swirl of olive oil
2 cans of rotel
2 cans of whole kernel corn
2 cans of black beans (drained)
2 pkgs of taco seasoning
1 pkg of ranch salad dressing mix
2 7oz cans of diced green chilies
2 8oz cans of tomato sauce
4 cans of water (I use the tomato sauce can)
1 cute kid to help you

Sauté onion in olive oil for a minute or two before adding beef/turkey.  Drain. Add taco and ranch pkgs, mix well.  Add in your remaining ingredients, mix well, and bring to a boil.  Reduce heat and allow to simmer for 15-30 minutes.  I prefer to start this around 2pm and let it simmer until dinner.  Serve with your favorite chips, we are a house divided between tortilla and corn.  Top with sour cream and sharp cheddar.  

You can obviously half this recipe very easily by doing just that, cutting ingredients in half.  In our home, half was not enough and this amount makes too much.  I save it for a quick lunch or leftovers.  And my girls LOVE!
